Things i keep being surprised aren't more widespread:
Editable Visualizations - There are a ton of cool ways to look at data. One of the things that drives me crazy about them is the widespread inability to edit the relationships shown by the visualizations. E.g. in a Venn Interface dragging something into a set and having that attribute added to it.
